CHILAQUILES

TOTOPOS: these are tortilla chips. You have to make them from corn tortillas that have dried out a bit. You can use fresh tortillas if you must. Fry in oil. Make extras. They won't last. (The only store bought brand to use in Mexico is Del Hogar, if you must)

RED SAUCE: I use 3 large fresh tomatoes that I have stewed with a little Mexican oregano, some dried guajillo chile, seeded and dry sauteed, tiny bit of vinegar, 1 tsp. of sugar, ½ tsp salt, 2 large clove of garlic, 1 small onion,...typical red sauce type stuff.

CHICKEN: shred last night's left over chicken or pan fry some strips. Doesn't matter too much. Toss a little Jugo Magi or a couple of drops of Worcestershire sauce in. Salt to taste.

Create a layer of totopos on the plate (they should be warm) add the chicken, cover in red sauce.

GARNISH as you like: fried egg, avocado, thin sliced onion, orange slice.

Dribble some Crema Mexicana or Crema Media on top, add some crumbled white cheese, and serve with frijoles molidos and hot (picante) sauce on the side.

Serve immediately so the totopos stay crisp. These are traditionally served for breakfast but can be eaten for any meal.
